One of the items we get from them to the event is quinoa, one of my own favorite grain. You can use quinoa as a side dish but it is also a great base for healthy and tasty salads!

Quinoa and pomegranate salad (for 2)

  • 200 ml vegetable stock
  • 100 g quinoa
  • 100 g pre-cooked chickpeas
  • 1 pomegranate
  • ½ bundle coriander
  • ½ lemon
  • Salt and pepper

Boil quinoa for 15 minutes in vegetable stock and then let rest for 15 minutes under the lid. Wash and chop coriander leaves. Stir in the pomegranate seeds, quinoa, chickpeas and coriander. Season with lemon juice, salt and pepper. Enjoy!
