I guess I’m not the only one who is craving for chocolate at this time of the year, specially when the days are cold and rainy. But the good news are: you don’t have to be without eating chocolate! Just leave the unhealthy processed sugar-trans-fat-milkchocolate bar in the vending machine, and start making your own raw chocolate instead.
This raw cacao chia pudding is very easy to make, tastes delicious and the texture is so comforting! Trust me, you feel hundred times better after eating this pudding than after the sugar-rush you get from normal chocolate. Again, you can make this ready on the previous evening, take with you to the office and enjoy in the afternoon when your worst sugar-graving is trying to kick in.
- 1 avocado
- 2 soft dates
- 2 tbs raw cacao powder
- 1 tea spoon vanilla extract
- 1 cup (250 ml) milk (e.g. rice or almond milk)
- 2 tbs chia seeds
“Mix avocado, dates (remember to remove the seeds if any!), raw cacao powder, milk and vanilla together with a bar mixer. Place the mixture into a bowl or glass jar. Add chia seeds, and stir with a spoon to combine. Place in the fridge for at least 30 minutes before eating.”
I decorated the pudding with cacao nibs, bee-pollen and goji berries.
